Homemade Green Chile Chilaquiles

Instructions
Green Chilaquiles are one of my favorite easy breakfast dishes! Crispy pieces of tortilla are cooked with scrambled eggs and then topped with my homemade green chile sauce. Add a little fresh cheese, avocado, and sour cream, and you have a delicious, comforting meal that the whole family will love.
For this recipe, I use my homemade green sauce on the right side of this page— it gives the Chilaquiles so much fresh flavor and makes this dish extra special.
Serves 4
Ingredients
- 8 Corn tortillas, cut into quarters
- 1/4 Avocado oil, or another healthy cooking oil, for frying
- 5 Eggs, scrambled
- 1 tsp Salt, to taste
- 1 cup Homemade Green Chile Sauce, prepared from my green sauce recipe
- 1/2 Cup of Monterey cheese, for topping
- Avocado, sliced or diced optional topping
- Sour cream, optional topping
Instructions
1. Prepare the Tortillas
- Cut the corn tortillas into quarters.
- Heat a little avocado oil in a large skillet over medium heat.
- Add the tortilla pieces and fry until they are golden and nicely crisp, but not too crispy.
- You want them to have a little crunch while still being able to soak up the green sauce.
2. Add the Eggs
- In a bowl, scramble your eggs and season them with a little salt.
- Once the tortillas are ready, add the scrambled eggs directly into the skillet with the tortillas.
- Gently toss and flip everything together until the eggs are fully cooked and coated around the tortilla pieces.
3. Add the Green Sauce
- Once the eggs are cooked, pour your homemade green chile sauce over the tortilla and egg mixture.
- Gently toss everything together so the sauce coats the tortillas and eggs.
- Heat just until everything is warmed through.
Don’t cook the Chilaquiles too long after adding the sauce. I like to serve them right away so the tortillas still have a little texture instead of becoming too soft.
4. Add Your Toppings
Serve immediately with your favorite toppings:
- 🧀 Fresh Mexican cheese
- 🥑 Fresh avocado
- 🥛 Sour cream
These Green Chilaquiles are best served hot and fresh, right after adding the green sauce.
The crispy tortillas, fluffy scrambled eggs, fresh green chile sauce, creamy avocado, and fresh cheese make the perfect combination.
